What is a fat trap used for? 

A Fat trap is a large rectangular device, often made of steel, which is normally installed at the junction of a restaurant's sewer line and main disposal system. The purpose of a fat trap is to collect and therefore reduce the number of fats, oils, and greases (FOG's) that enter the main sewers. How does a fat trap work?

In the most basic terms, a fat trap works by slowing down the flow of warm/hot greasy water and allowing it to cool. As the water cools, the grease and oil in the water separate and float to the top of the trap. The cooler water - minus the grease - continues to flow down the pipe to the sewer.
