Different parts of an extractor fan and their functions.

Extractor fans are composed of many different components but consists of three main components which we will take a look at today: a skirt or capture panel to contain the rising gases (also known as the "effluent plume"), one or more grease filters, and a fan or tangential blower for forced ventilation.

The first component we will be discussing is the different types of filters. There are different types of filters depending on the type of extractor fan you have installed. The first filter we will look at is the baffle grease filter.

What is a baffle grease filter?

Baffle grease filters are installed to manage commercial kitchen grease and regulate exhaust ventilation and are generally made of stainless steel. Baffle grease filters safely guard the exhaust vents to keep flames or flammable debris from entering the ducts, and they capture grease vapors and particles to prevent them from building up in the ventilation system.

What is a charcoal filter?

The charcoal filter is fitted to recirculating cooker hoods to removing the cooking odors, they are positioned above the grease filter so that the air passing through them is free of grease. Charcoal filters cannot be cleaned but need to be replaced about every 9 to 12 months, but this does depend upon the usage of the cooker.

Now for the fan. What is the purpose of the fan?

The mechanical fan is above the stove or cooktop in the kitchen. It removes airborne grease, combustion products, smoke, odors, heat, and steam from the air by evacuation of the air and filtration.

Why do I need to know what the functions are of the extractor fan and the different components?

It is important for a restaurant owner to know what is going on in the kitchen and how the systems operate as well as arrange for the necessary cleaning of these systems.

As a business owner, you need to ensure that your commercial kitchen is complying with the National Health Regulations and have the necessary appliances installed and cleaned at frequent intervals. A failing health inspection grade halts operations and results in high repair or cleaning costs depending on the reason for failing. This can also result in loss of revenue.

Site Inspection can be a frustrating and stressful experience. And infractions can have a major impact on your business. Cleaning is incredibly important in the foodservice industry for preventing cross-contamination and passing site inspections and health inspections. It’s imperative that you clean your business regularly and thoroughly. But, with so many things to clean in a restaurant, it can be difficult to remember all the individual cleaning tasks that you need to take care of and how regularly you need to clean your equipment.

Hiring an experienced company like ECS Deep Clean Industries who is certified and affiliated with and/or endorsed by Governmental Agencies and Independent Associations, you are sure to pass any health inspection. Upon completion of the inspection, ECS Deep Clean Industries will provide you with the necessary certification.
